The grapes were sourced from free draining, gravel soil Vineyard in the heart of Waipara Valley. Vines were planted in 2004 by Mr. David Bedford. 2019 was very hot and dry all through growing season, result in almost no botrytis influence. After harvested, grapes were whole bunch pressed, fermented in a stainless-steel tank under temperature control. Fermentation was stopped at about 7g/L residual sugar to balance with acidity.
